Baked Parmesan Chickpeas

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs optional
  • 1/4 cup chopped fresh parsley

Method
 

  1. Preheat your oven to 400°F (200°C). Line the 9x13 inch baking dish with aluminium foil, leaving some overhang for easy removal.
  2. In a mixing bowl, whisk together olive oil, garlic, oregano, basil, salt, and pepper.
  3. Add the chickpeas to the bowl and toss to coat with the herb mixture.
  4. Pour the chickpea mixture into the prepared baking dish and spread it out evenly.
  5. Place the baking dish in the oven and bake for 20-25 minutes, or until the top is golden brown and the chickpeas are crispy.
  6. Remove the baking dish from the oven and sprinkle with chopped parsley.
  7. Let the parmesan chickpeas rest for 5-10 minutes before serving. This will help the flavours to meld together and the chickpeas to retain their crunch.

Notes

For extra crunch, add breadcrumbs before baking. Let rest after baking for best texture.
