- Preheat your toaster or toaster oven to 180°C (350°F). Slice the bread into 1-inch thick slices and toast until lightly browned. You'll know it's done when the bread emits a warm, inviting aroma and the crust is crispy.
- In a separate bowl, mix the cottage cheese with honey or maple syrup, vanilla extract, and a pinch of salt. Stir until smooth and creamy, pausing occasionally to scrape down the sides of the bowl with a spatula. The mixture should resemble a light and airy mousse.
- On a serving plate or toast board, arrange two slices of toasted bread side by side. Spoon the cottage cheese mixture over the bread, creating a layer about 1-inch thick. You'll know it's the right consistency when the cheese coats the bread evenly but doesn't overflow.
- Garnish with a few mixed berries, arranged artfully to resemble a miniature fruit salad. You can also sprinkle a pinch of sugar or cinnamon over the berries for added flavour.
- If using sliced almonds or chopped walnuts, sprinkle them over the top of the toast for added crunch and texture.
- Refrigerate the toast for at least 30 minutes to allow the flavours to meld and the bread to absorb the moisture. When ready to serve, slice into individual portions and serve chilled.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Simply reheat in the microwave or toaster oven and serve with a fresh fruit salad or granola for added crunch.
Notes
