Ingredients
  

  • 240 g cottage cheese
  • 100 g dark chocolate chips at least 70% cocoa
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons unsweetened almond milk
  • 1/4 cup rolled oats
  • 1/4 cup chopped walnuts optional

Method
 

  1. In a large mixing bowl, combine the cottage cheese, dark chocolate chips, honey, vanilla extract, and salt. Mix until smooth and creamy, using a hand mixer or whisk.
  2. Add the unsweetened almond milk and mix until well combined. The mixture should still be slightly thick.
  3. Scoop the mixture into an ice cube tray or a small freezer-safe container. You can also pour it into a large serving bowl if you prefer.
  4. Freeze the mixture for at least 10 minutes to allow it to set. You can also store it in the fridge for up to 24 hours if you prefer a softer texture.
  5. Once the mixture is set, transfer it to a serving dish or individual cups. Top with chopped walnuts, if desired.
  6. Refrigerate for 30 minutes before serving, or until you're ready to indulge.
  7. Serve chilled, garnished with fresh fruit or a sprinkle of cinnamon, if desired.

Notes

Chill at least 10 minutes in freezer or up to 24 hours in fridge for softer texture. Optional toppings: fresh fruit or cinnamon.
