Ingredients
  

  • 500 g Greek yogurt
  • 1 cup mixed berries fresh or frozen
  • 1/2 cup granola
  • 1/4 cup honey
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped walnuts
  • 1 scoop vanilla protein powder 30g
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Ice cubes optional

Method
 

  1. Begin by layering 1-2 cups of Greek yogurt in a tall clear glass or parfait dish. The sound of the spoon scraping against the side of the glass is a satisfying one – it's almost therapeutic!
  2. Add a spoonful of mixed berries on top of the yogurt. If using frozen berries, allow them to thaw slightly first – the sweet aroma that fills the air will have you hooked!
  3. Continue layering the ingredients, alternating between yogurt, berries, granola, and a drizzle of honey. I love the sound of the spoon tapping against the side of the glass as I build each layer.
  4. Finish the parfait with a sprinkle of chopped fresh mint and a few walnuts. The vibrant green colour of the mint is like a breath of fresh air – it's invigorating!
  5. Add a scoop of vanilla protein powder on top and a pinch of salt. You might be wondering why salt, but trust me, it brings out the sweetness of the berries.
  6. If desired, add ice cubes to chill the parfait further. The sight of the ice cubes melting into the yogurt is a testament to the refreshing nature of this dish.
  7. Drizzle a tablespoon of lemon juice over the parfait and sprinkle with chopped walnuts. The citrusy zing of the lemon is the perfect complement to the sweetness of the berries.
  8. Serve immediately and enjoy!

Notes

If using frozen berries, thaw slightly before layering. Ice cubes are optional for extra chill. The pinch of salt enhances sweetness.
