Ingredients
  

  • 6 cod fillets 150g each
  • 1 cup orzo
  • 2 lemons juiced
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 200°C (400°F). Line a 9x13 inch baking dish with aluminium foil, leaving some overhang for easy cleanup.
  2. In a large mixing bowl, combine the orzo, lemon juice, olive oil, garlic, oregano, thyme, salt, and black pepper.
  3. Arrange the cod fillets in a single layer in the prepared baking dish. Pour the orzo mixture over the cod, making sure each fillet is coated.
  4. Drizzle the chicken broth over the top of the cod and sprinkle with Parmesan cheese.
  5. Cover the dish with aluminium foil and bake for 12 minutes.
  6. Remove the foil and continue baking for an additional 6 minutes, or until the cod is cooked through and the orzo is tender.
  7. Remove the dish from the oven and let it rest for 5-10 minutes before serving.

Notes

Let the dish rest for 5-10 minutes after baking to allow the flavors to meld. You can substitute chicken broth with vegetable broth if desired.
