Ingredients
  

  • 1 cup shredded cheese cheddar or mozzarella work well
  • 1/2 cup cooked sausage diced
  • 1/2 cup black beans cooked
  • 1/4 cup chopped onion
  • 1 minced garlic clove
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • 6 eggs
  • Salt and pepper to taste
  • 4-6 whole wheat tortillas
  • Chopped fresh cilantro for garnish
  • Lime wedges for serving optional

Method
 

  1. Crack the eggs into a bowl and whisk them together. Add a pinch of salt and pepper to taste. Set aside. Sound: the gentle crack of the egg shells.
  2. Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and minced garlic and sauté until softened. Smell: the aroma of sautéed onion and garlic.
  3. Add the cooked sausage, black beans, cumin, paprika, and cayenne pepper (if using) to the pan and stir to combine. Cook for 2-3 minutes. Texture: the sausage and beans should be heated through.
  4. Colour: the eggs will start to set and turn a pale yellow.
  5. Sight: the cheese melts and the tortilla starts to brown.
  6. Sound: the sizzle of the cheese as it melts.
  7. Smell: the aroma of melted cheese and cooked tortilla.
  8. Sight: the vibrant colours of the filling and the crispy tortilla.
  9. Texture: the quesadilla returns to its crispy state.

Notes

For a spicier version, include the cayenne pepper. Serve with lime wedges for extra freshness.
