Ingredients

  • 250 g rolled oats
  • 150 g protein powder of your choice
  • 100 g honey
  • 50 g coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 100 g dark chocolate chips
  • 50 g chopped nuts optional

Method

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper. The aroma of warm oats and chocolate will start to fill your kitchen, getting you excited for the finished product.
  2. In a large bowl, combine the rolled oats, protein powder, and baking soda. The mixture will have a coarse texture and a slightly sweet smell.
  3. In a separate bowl, whisk together the honey, coconut oil, eggs, and vanilla extract. The mixture will be smooth and creamy, with a hint of sweetness.
  4. Combine the wet and dry ingredients, stirring until a dough forms. The dough will be sticky and slightly crumbly, with a sweet and nutty aroma.
  5. Fold in the dark chocolate chips and chopped nuts (if using). The chocolate will add a burst of sweetness and flavor to the cookies.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking tray, leaving about 2 inches of space between each cookie. The cookies will be soft and chewy, with a golden brown color.
  7. Bake for 12-15 minutes, or until the edges are lightly golden. The cookies will be firm to the touch and have a delicious aroma.
  8. Remove from the oven and let cool on the baking tray for 5 minutes before transferring to a wire cooling rack to cool completely. The cookies will be crispy on the outside and chewy on the inside, with a sweet and satisfying flavor.
