- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper. The parchment paper should be smooth and even, with no wrinkles or creases.
- In a large mixing bowl, combine the rolled oats, protein powder, chopped peanut butter cups, and chia seeds. The mixture should be dry and crumbly, with a sweet aroma from the peanut butter cups.
- In a separate bowl, mix together the honey, almond butter, and coconut oil until smooth and creamy. The mixture should be pale yellow in colour and have a creamy texture.
- Add the wet ingredients to the dry ingredients and stir until everything is well combined. The mixture should be sticky and hold its shape when pressed together.
- Press the mixture into the prepared baking tray and bake for 15 minutes, or until the edges are lightly golden brown. The bars should be firm to the touch and have a sweet, nutty aroma.
- Remove the bars from the oven and let them cool completely on a wire rack. The bars should be cool to the touch and have a firm, chewy texture.
Notes
Let bars cool completely before cutting for clean edges. Store in an airtight container in the refrigerator for up to a week.
