Ingredients
Method
- Heat the olive oil in a large frying pan or skillet over medium-high heat. The oil should shimmer slightly and have a subtle aroma.
- Add the diced onion to the pan and cook until it's translucent and lightly caramelised, stirring occasionally. This should take about 5-7 minutes.
- Add the minced garlic to the pan and cook for an additional 1-2 minutes, stirring constantly to prevent burning. The garlic should be fragrant and slightly softened.
- Add the cooked shrimp to the pan and cook until they're pink and fully cooked, about 2-3 minutes per side. The shrimp should be firm to the touch and have a slight char.
- Add the diced tomatoes, cumin, smoked paprika, salt, and black pepper to the pan. Stir to combine and cook for an additional 2-3 minutes, allowing the flavours to meld. The mixture should be slightly thickened and have a depth of flavour.
- Add the cooked black beans to the pan and stir to combine. Cook for an additional 1-2 minutes, allowing the flavours to meld. The beans should be heated through and have a slightly tender texture.
- Stir in the chopped fresh cilantro and lime juice. Cook for an additional 1 minute, allowing the flavours to meld. The mixture should be fragrant and slightly zesty.
- Serve the shrimp and black bean mixture over the cooked brown rice, garnished with additional cilantro and lime wedges if desired.
Notes
Cost estimates are based on UK prices and may vary. For best results, use large raw shrimp and adjust seasoning to taste.
