High-Protein Tofu and Chickpea Curry

Ingredients
  

  • 1 block firm tofu drained and cut into small cubes (120g)
  • 1 can chickpeas drained and rinsed (225g)
  • 2 medium onions chopped (120g)
  • 3 cloves garlic minced (9g)
  • 1 tablespoon curry powder 15g
  • 1 teaspoon ground cumin 5g
  • 1 teaspoon turmeric 5g
  • 1/2 teaspoon cayenne pepper 2g
  • 1 can coconut milk 400ml
  • 1 cup water 250ml
  • 1 teaspoon salt 5g
  • 2 tablespoons olive oil 30g
  • Fresh coriander chopped (optional)

Method
 

  1. Heat 1 tablespoon of olive oil in a large frying pan or skillet over medium heat. Add the chopped onions and cook until they're translucent and slightly caramelised, stirring occasionally.
  2. Add the minced garlic and cook for 1-2 minutes, until fragrant. Be careful not to burn the garlic, as it can quickly become bitter.
  3. Add the cubed tofu and cook until it's golden brown on all sides. Remove the tofu from the pan and set it aside.
  4. Add the curry powder, cumin, turmeric, and cayenne pepper to the pan and cook for 1-2 minutes, until the spices are fragrant. Stir constantly to prevent the spices from burning.
  5. Add the chickpeas to the pan and cook for 2-3 minutes, until they're heated through.
  6. Pour in the coconut milk and water, and bring the mixture to a simmer. Reduce the heat to low and let it cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Add the cooked tofu back into the pan and stir to combine. Season with salt to taste.
  8. Simmer the curry for a further 5-10 minutes, until the flavours have melded together and the sauce has thickened to your liking.
  9. Serve the High-Protein Tofu and Chickpea Curry hot, garnished with chopped fresh coriander if desired.

Notes

Adjust the amount of cayenne pepper to your preferred spice level. For a richer flavor, you can let the curry simmer longer on low heat. Fresh coriander adds a bright, fresh finish.
