High-Protein Turkey and Hummus Wrap

Ingredients
  

  • 1 pound boneless skinless turkey breast
  • 1/2 cup hummus
  • 1 large red bell pepper sliced
  • 1 large cucumber sliced
  • 1 large tomato sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese optional
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4-6 whole wheat wraps

Method
 

  1. In a large bowl, combine the sliced turkey breast, hummus, lemon juice, salt, and black pepper. Mix well until the turkey is coated with the hummus mixture. Set aside for at least 10 minutes to allow the flavours to meld.
  2. Heat the olive oil in a large frying pan or skillet over medium-high heat. Add the sliced red bell pepper, cucumber, and tomato. Cook for 5-7 minutes, or until the vegetables are tender and lightly browned.
  3. Add the sliced turkey breast to the pan and cook for an additional 3-5 minutes, or until cooked through.
  4. Warm the whole wheat wraps according to the package instructions or by wrapping them in a damp cloth and microwaving for 20-30 seconds.
  5. Assemble the wraps by spreading a tablespoon of hummus on each wrap, followed by a few slices of the turkey breast and some of the sautéed vegetables. Top with parsley and feta cheese (if using). Roll up the wraps tightly and slice in half.
  6. Serve immediately and enjoy!

Notes

For best flavor, let the turkey marinate in the hummus mixture for at least 10 minutes. You can substitute whole wheat wraps with gluten-free wraps if needed.
