Ingredients
  

  • 1 cup rolled oats
  • 1 cup whey protein powder
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup chopped nuts optional
  • 1/4 cup dried fruit optional
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons coconut oil
  • 2 eggs
  • 1 teaspoon baking powder

Method
 

  1. Preheat your oven to 350°F (180°C). Line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the oats, whey protein powder, almond butter, honey, chopped nuts, and dried fruit (if using). Mix until well combined.
  3. Add the vanilla extract and salt to the mixture and stir until smooth.
  4. In a separate bowl, whisk together the eggs and coconut oil. Add the baking powder and whisk until combined.
  5. Add the egg mixture to the oat mixture and stir until a dough forms.
  6. Press the dough into the prepared baking dish and smooth out the top.
  7. Bake for 20-25 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let cool completely before slicing into bars.

Notes

Let bars cool completely before slicing to prevent crumbling. Store in an airtight container in the fridge for up to a week.
