Method
- In a large pan, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
- Remove the chicken from the pan and set aside. In the same pan, add the remaining 2 tablespoons of olive oil, garlic, lime juice, cumin, paprika, salt, and pepper. Cook for 1-2 minutes, until fragrant.
- Add the cooked chicken back into the pan and stir to coat with the spice mixture.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- To assemble the tacos, lay a lettuce leaf on a flat surface and spoon a few pieces of the chicken mixture onto the centre of the leaf. Top with diced tomatoes, shredded cheese (if using), and any other desired toppings.
- Roll up the lettuce leaf to form a tight taco and repeat with the remaining ingredients.
- Store any leftover tacos in an airtight container in the fridge for up to 3 days.
- To reheat, simply microwave the tacos for 10-15 seconds or until warmed through.
Notes
For a lower-calorie version, omit the shredded cheese and sour cream. Leftover tacos can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave for 10-15 seconds.
