Low-Calorie High-Protein Chicken Lettuce Tacos

A healthy twist on classic tacos, using lettuce leaves instead of tortillas for a low-carb, high-protein meal. The chicken is seasoned with cumin and paprika, then wrapped in crisp lettuce with fresh tomatoes and optional toppings.

Ingredients
  

  • 1 pound boneless skinless chicken breast, cut into small pieces
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4-6 lettuce leaves
  • 1 cup diced tomatoes
  • 1 cup shredded cheese optional
  • Salsa avocado, and sour cream (optional)
  • 10-12 corn tortillas

Method
 

  1. In a large pan, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
  2. Remove the chicken from the pan and set aside. In the same pan, add the remaining 2 tablespoons of olive oil, garlic, lime juice, cumin, paprika, salt, and pepper. Cook for 1-2 minutes, until fragrant.
  3. Add the cooked chicken back into the pan and stir to coat with the spice mixture.
  4. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  5. To assemble the tacos, lay a lettuce leaf on a flat surface and spoon a few pieces of the chicken mixture onto the centre of the leaf. Top with diced tomatoes, shredded cheese (if using), and any other desired toppings.
  6. Roll up the lettuce leaf to form a tight taco and repeat with the remaining ingredients.
  7. Store any leftover tacos in an airtight container in the fridge for up to 3 days.
  8. To reheat, simply microwave the tacos for 10-15 seconds or until warmed through.

Notes

For a lower-calorie version, omit the shredded cheese and sour cream. Leftover tacos can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave for 10-15 seconds.
