Ingredients
  

  • 2 cups egg whites approx. 12 egg whites
  • 1 cup diced bell peppers any colour
  • 1 cup diced onions
  • 2 cloves garlic minced
  • 1 cup diced mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • Chopped fresh parsley for garnish

Method
 

  1. Start by cracking the egg whites into a mixing bowl and whisking them together with a fork until they're smooth and fluffy. Add a pinch of salt and pepper to taste. (Colour: The egg whites will start to lighten in colour and become frothy.)
  2. Heat the olive oil in a large frying pan or skillet over medium heat. Once the oil is hot, add the diced onions and sauté until they're translucent and slightly caramelised. (Smell: The onions will start to release their sweet aroma.)
  3. Next, add the diced bell peppers and mushrooms to the pan and cook until they're tender and lightly browned. (Texture: The vegetables will start to soften and become slightly tender.)
  4. Add the minced garlic to the pan and cook for an additional minute, stirring constantly to prevent burning. (Smell: The garlic will start to release its pungent aroma.)
  5. Pour the egg whites into the pan and stir gently to combine with the vegetables. Cook for an additional 2-3 minutes, until the eggs are almost set. (Texture: The eggs will start to thicken and become more solid.)
  6. Use a spatula to gently scramble the eggs, breaking them up into small curds. (Sound: The eggs will start to sizzle and release a soft crackling sound.)
  7. Once the eggs are cooked to your liking, remove the pan from the heat and season with paprika and cayenne pepper (if using). (Colour: The eggs will have a light golden colour and a slightly puffed texture.)
  8. Use a spatula to transfer the egg scramble to a serving dish and garnish with chopped fresh parsley. (Colour: The parsley will add a vibrant burst of green to the dish.)

Notes

Add cayenne pepper for an optional spicy kick.
