Ingredients
  

  • 1 pound boneless skinless turkey breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 2 cups mixed vegetables broccoli, carrots, snap peas
  • 2 cups cooked brown rice
  • 1 tablespoon soy sauce make sure it's gluten-free
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro chopped (optional)

Method
 

  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced onion and cook for 3-4 minutes, or until it starts to soften and turn translucent. You'll know it's done when the onion starts to smell sweet and caramelise.
  2. Add the minced garlic and cook for another minute, stirring constantly to prevent burning. You'll know it's done when the garlic is fragrant and starts to turn golden.
  3. Add the sliced bell pepper and cook for 3-4 minutes, or until it starts to soften and turn tender. Stir occasionally to prevent burning.
  4. Add the mixed vegetables and cooked brown rice to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender and the rice is heated through. You'll know it's done when the rice is fluffy and the vegetables are cooked to your liking.
  5. Add the cooked turkey breast to the skillet and stir-fry for 1-2 minutes, or until it's heated through and coated with the sauce. You'll know it's done when the turkey is cooked to your liking and there's a nice sheen to the sauce.
  6. In a small bowl, whisk together the soy sauce, honey, grated ginger, and red pepper flakes. Pour the sauce over the turkey and vegetables, and stir-fry for another minute to coat everything evenly. You'll know it's done when the sauce is sticky and caramelised.
  7. Taste and adjust the seasoning as needed. You'll know it's done when the dish is delicious and satisfying.
  8. Transfer the stir-fry to a serving platter or individual plates, and garnish with chopped fresh cilantro if desired. You'll know it's done when it's time to enjoy your delicious and healthy meal!

Notes

For a gluten-free version, ensure soy sauce is labeled gluten-free. Feel free to swap in your favorite vegetables or use cauliflower rice for even fewer carbs.
