Ingredients
  

  • 500 g lean turkey breast
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 large red bell pepper diced
  • 2 tbsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can diced tomatoes 400g
  • 1 can kidney beans drained and rinsed (150g)
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Optional: jalapenos sour cream, and shredded cheese for topping

Method
 

  1. Heat the oil and cook the onion, garlic, and bell pepper In a large frying pan or skillet, heat 2 tbsp of oil over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened and lightly browned, stirring occasionally. This should take around 10 minutes, during which time the kitchen will be filled with the sweet aroma of sautéed vegetables.
  2. Add the chilli powder, cumin, and smoked paprika Add the chilli powder, ground cumin, and smoked paprika to the pan and stir to combine. Cook for 1 minute, allowing the spices to infuse the oil and intensify the flavour.
  3. Add the turkey breast and cook until browned Add the lean turkey breast to the pan, breaking it up with a spoon as it cooks. Cook until the turkey is browned, about 5-7 minutes. The turkey will release a rich, meaty aroma that will make your mouth water.
  4. Add the diced tomatoes, kidney beans, vegetable broth, salt, and pepper Add the diced tomatoes, kidney beans, vegetable broth, salt, and pepper to the pan, stirring to combine. Bring the mixture to a simmer and cook for 20-25 minutes, or until the flavours have melded together and the turkey is cooked through.
  5. Taste and adjust the seasoning Taste the chili and adjust the seasoning as needed. You can add more chilli powder, cumin, or smoked paprika to taste.

Notes

Optional toppings include jalapenos, sour cream, and shredded cheese. Adjust seasoning to taste.
