- In a large mixing bowl, combine the crushed biscuits and melted butter until well combined. The mixture will resemble fine crumbs with a rich, buttery aroma.
- Press the biscuit mixture into the base of a 20cm springform tin. You'll know it's ready when the mixture is evenly distributed and the tin is coated with a smooth layer.
- In a separate mixing bowl, beat the mascarpone and cream cheese until smooth. You'll know it's ready when the mixture is light and fluffy, with a creamy texture.
- Add the granulated sugar and beat until combined. The mixture will have a lovely sweetness and a smooth consistency.
- In a separate bowl, whisk together the eggs and vanilla extract. You'll know it's ready when the eggs are well-beaten and the mixture is smooth.
- Add the egg mixture to the mascarpone mixture and beat until combined. The mixture will be light and airy, with a lovely texture.
- Pour the cheesecake mixture over the biscuit base and smooth the top. You'll hear a lovely 'whoosh' sound as the mixture settles.
- Refrigerate the cheesecake for at least 4 hours or overnight. When you remove it from the fridge, it will have a lovely set texture and a beautiful colour.
- Just before serving, top the cheesecake with fresh or frozen berries and chopped nuts. You'll be amazed at the vibrant colours and textures.
Notes
Ensure the cream cheese is softened for a smooth filling. For best results, chill the cheesecake overnight. You can use any combination of your favorite berries and nuts for topping.
